Christmas Focaccia

METHOD

  1. In a large bowl, combine the ciabatta mix with olive oil, water and cranberry sauce to form a soft dough.
  2. Knead for 5 minutes until smooth, then cover with a damp tea towel or lightly oiled polyethene and leave to rest for 15 minutes.
  3. Lightly grease a loaf tin and transfer the rested dough into it. Leave to prove for 30 minutes in a warm place.
  4. Using your fingers, press deep dimples into the dough.
  5. Add in the cooked pigs in blankets, stuffing balls and cranberry sauce.
  6. Bake at 200°C for 30 minutes, or until golden and cooked through.
  7. Drizzle over a bit of olive oil and sprinkle some rosemary to finish.
  8. Serve warm with a pot of gravy for dipping.
