Orange and Blackberry Bundt Cake

Ingredients

Orange Cake Mix 5 x 500g
  • Orange Cake Mix 5 x 500g
  • 100ml Fresh Orange Juice (1 large Orange)
  • 100ml Water
  • 60 ml Vegetable oil
  • 150g Blackberries
  • ORANGE ICING
  • 150-200g Icing Sugar
  • 80-100ml fresh Orange juice (+zest)
  • 1-2 Blackberries
  • TOPPINGS
  • Blackberries
  • Orange Segments

METHOD

Sponge:

  1. Pre-heat the oven on 170oC or 160oC fan oven.
  2. Prepare your bundt tin by greasing the entire pan. Add a tbsp of flour and shake the flour around until it covers the whole tin.
  3. Mix the Orange Cake Mix with the orange juice, water and oil until it forms a smooth batter.
  4. Fold in the blackberries.
  5. Pour the mix in the tin and bake for 45-50 mins (varies between appliances). In the meantime, prepare the icing.
  6. Remove from the oven and allow to stand for 10-15 minutes before tipping out onto a cooling wire.
  7. Cool completely on wire racks over a shallow pan or tray. Slowly pour the icing over the cake.
  8. For the icing, mix the ingredients together using a fork to meet desired consistency and smash the blackberries into the mix.
  9. Place the iced cake on your serving plate and decorate with blackberries and orange segments.
