  • BAKE: 20m
  • SERVES: 12

METHOD

Method (Makes 12)

Place the bread mix into a bowl with the water.

Mix to a soft dough.

Knead well for 5 minutes until a well developed dough is formed.

Add the olive oil and mix for a further minute.

Rest for 10 minutes.

Meanwhile cut up 12 pieces of greaseproof or baking parchment into squares roughly measuring 15 x 15cm.

Add the filling ingredients to the dough and mix well so that it is evenly dispersed.

Divide the dough into 12 pieces.

Mould into rounds.

Place the greaseproof squares into the muffin holes and place the dough rounds on top.

Cover with polythene and place in a warm place for 40-50 minutes or until double in size.

Bake in a preheated oven 200°C (390°F) gas mark 6 for 20 minutes until golden brown and well risen

"Just a line to say how much I appreciate your bread mixes - I regularly use the Mixed Grain and the Cheddar & Sundried Tomato mix and get great results every time. I mix in my Kenwood (not a bread machine) mixer for 5 mins then rest for 5 mins and knead for a very short time. The results are constant. I sometime add a 5ml spoonful of cumin seeds to the savoury mix giving superb flavour. I have now joined your online baking club".
