Toffee Mocha Cake Bars

Step #1

METHOD (Makes 10): Mix all the ingredients under cake to form a batter. Divide the batter between 10 well greased mini loaf tins.

Step #2

Bake in a preheated oven 190°C (375°F) gas mark 5 for 18-20 minutes until firm to the touch.

Step #3

Cool in the tins for 5 minutes before transferring onto a wire rack. Allow to cool completely before decorating.

Step #4

Prepare the icing by mixing the coffee with the warm water until dissolved. Add the liquid to the icing sugar and mix to a smooth paste.

Step #5

Using a skewer make three deep holes (without going through the top of the bars) on the under side of each cake bar.

Step #6

Using a piping bag and a small nozzle fill each hole with the coffee icing. Thin out the remaining icing with water if necessary and drizzle over the cakes as per illustration.
