Parkin Cake

Ingredients

Ginger Cake Mix 5 x 500g
  • Ginger Cake Mix 5 x 500g
  • Wright's Ginger Cake Mix 500g
  • Oatflakes 100g
  • White Bread Flour 20g
  • Treacle 30g
  • Vegetable Oil 60ml
  • Water 220ml
  • Icing Sugar 150g
  • Water 4 teaspoons
  • Stem Ginger Pieces

ADD TO BASKET

METHOD

METHOD – (Makes 1).

Using the ingredients listed above for the “Cake”, mix all of the ingredients together to form a batter, by hand following the instructions as on the pack to produce a finished baked cake. Allow to cool.
Using the ingredients listed above for the “Water Icing”, blend together in a bowl the icing sugar & water using a spoon.
Cover the top of the cake with the water icing and finish with some sprinkled stem ginger pieces.

USING A BREADMAKER

Using the ingredients listed above for the “Cake”, mix all of the ingredients together to form a batter, by using a bread machine following the instructions as on the pack to produce a finished baked cake. Allow to cool.
Using the ingredients listed above for the “Water Icing”, blend together in a bowl the icing sugar & water using a spoon.
Cover the top of the cake with the water icing and finish with some sprinkled stem ginger pieces.

“I have tried your ginger cake mix and although the family liked it decided to experiment and this last week made the mix but included the zest of a lime finely grated and the juice of the lime and 2oz preserved ginger cut into small pieces. It has been a major success and some went to a coffee morning where i was asked for the recipe several times!!”
