Pear and Orange Cake

  • SERVES: 12

METHOD

Pears:

  1. Quarter the 3 pears, remove the cores and stem ends. Then slice the quarters into 4-5 slices.
  2. Mix the sugar and cinnamon in a bowl and set aside.
  3. Mix the Orange Cake mix with the water and oil until it forms a smooth batter. Fold in the peeled and diced pear (the single one cut in cubes for the mixture).
  4. Pour the mixture in a greased or lined 8-inch cake tin.
  5. Dip each of the lined pears in the cinnamon sugar and starting from the outside edge arrange the pears over the cake batter in a circular pattern, overlapping them to cover the batter as much as possible.
  6. Bake in a pre-heated oven on 160oC fan for 35-40 minutes or until a skewer inserted into the middle of the cake comes out clean.
  7. Remove from the oven and allow to stand for 10-15 minutes before tipping out onto a cooling wire.
