Baked by you: October’s highlights

In the month of Halloween, we’ve seen lots of spook-tacular bakes as well as autumnal recipes, created by our talented customers.
We love a Halloween-themed bake, and Niki has nailed it with this Chocolate & Pistachio Loaf Cake. Simply add 2 tablespoons of ground pistachios to our Chocolate Fudge Cake Mix batter, then top with chocolate fudge icing, more ground pistachios and some edible eye sprinkles. Excellent!
An indulgent Sticky Toffee Apple Cake created by a customer with our Toffee Cake Mix. Adding two chopped apples into the mix and drizzling toffee sauce on top (poking holes into the cake so it seeps through). Deliciously served with cream or ice cream. Yuuuuuum!
We recently partnered up with Clare Andrews, author of The Ultimate Air Fryer Cookbook, who will provide us with some airfryer recipes using our mixes. So far, she’s used her air fryer to make ciabatta rolls – splitting the Ciabatta Bread mixture into 4 and cooking at 175c for 8 minutes. Customer Sammie made this hearty autumnal Apple and Cinnamon Loaf Cake. All you need is our Madeira Cake Mix (available at Booths, Co-op and Sainsbury’s), 1 grated apple, and 1.5 tsp cinnamon. Make up the cake mix with the cinnamon, and fold in the grated apple. Pour into a 2lb loaf tin and bake at 140C for approximately 1 hour. The cake is baked when an inserted skewer comes out clean.
While the cake is cooling, whisk together 250g mascarpone, 1tsp vanilla extract and 2 tbsp icing sugar (sifted), then spoon onto the cake and spread to cover. Scatter toasted walnuts, and chill for one hour before serving.
