Aperol Spritz drizzle cake

Ingredients

Orange Cake Mix 5 x 500g
  • Orange Cake Mix 5 x 500g
  • 175ml water
  • 60ml vegetable oil
  • 25ml Aperol
  • 1 orange zested
  • 2 tbsp orange juice
  • DRIZZLE
  • 100g caster sugar
  • 25ml Aperol
  • 50ml orange juice
  • 25ml Prosecco

ADD TO BASKET

METHOD

  1. In a mixing bowl, combine the water, vegetable oil, Aperol, orange zest and lemon juice. Whisk until fully blended, then gradually add in the Wright’s Baking Orange Cake Mix. Continue mixing with an electric whisk or stand mixer until the batter is smooth and lump-free.
  2. Empty the cake batter into a greased and lined loaf tin then pop into a pre-heated air fryer for 50 minutes at 145oC until golden brown and when a toothpick inserted comes out clean. Depending on the model of your air fryer, you may need to turn the cake around for a more even bake after 35 minutes.
  3. After baking, remover from the air fryer and place on a cooling rack to cool down completely then poke holes all over the top of the cake using a toothpick.
  4. While the cake cools, combine the caster sugar, Aperol, orange juice and Prosecco into a syrupy drizzle then pour over the top of the cake leaving it to soak up the deliciously citrusy drizzle!
  5. Slice up and serve with whipped cream and enjoy!
