Apple Dappy

Ingredients

Scofa Soda Bread Mix 500g
  • Scofa Soda Bread Mix 500g
  • Wright’s Scofa Soda Bread Mix 250g
  • Caster Sugar 50g
  • Butter (cubed) 25g
  • Clotted Cream 2 tbsp
  • Milk 100ml
  • Apples – medium 3
  • Lemon Juice 1 tbsp
  • Lemon Juice 1 tbsp

METHOD

Method (Makes 1 unit – 7 portions)

  1.  Peel, core and dice the apples.
  2. Place in a saucepan with the lemon juice and 2 tbsp of water.
  3. Cover and simmer for 5 minutes stirring occasionally.
  4. Strain the apples and leave to cool.
  5. Place the bread mix and butter into a bowl and rub in the butter.
  6. Add the sugar and mix well.
  7. Add the clotted cream and milk and bring the mix together to form a dough.
  8. Turn out the dough onto a floured surface.
  9. Roll out into a rectangle and about 18x30cm (7-12 inches).
  10. Spoon the cooled apple filling onto the dough.
  11. Roll up tightly from the longer edge, like a Swiss roll.
  12. Cut into 7 even slices.
  13. Place into an 18-20cm (7-8 inches) round tin greased with butter and lined.
  14. Sprinkle with the granulated sugar.
  15. Bake in a preheated oven 200°C (390°F) gas mark 6 or 25 minutes until golden brown in colour.
