Ingredients
- Orange Cake Mix 5 x 500g
- Wright’s Orange Cake Mix 500g
- Water 150ml
- Vegetable Oil 60ml (4 tablespoons)
- Mixed Fruit 250g
- Orange Juice 100ml
- DRIZZLE:
- Icing Sugar (sifted) 100g
- Cold Water 2 - 3 tablespoons
Method (Makes 1 cake – 12 portions)
Place the mixed fruit and orange in a bowl and mix well. Cover and leave to soak overnight.
Grease and line a tin measuring 30 x 20cm (12×8 inches)
Place the cake mix, water, oil and mix together to form a smooth batter.
Add the soaked fruit to the cake batter and mix well.
Pour into the pre lined tin and in a pre-heated oven 170 °C (340°F, Gas Mark 3) for approximately 25-30 minutes until golden brown and baked through.
Allow the cake to completely cool.
Make up the drizzle with the icing sugar and water.
Drizzle over the cake and allow to set.
Cut into slices.
