Lemon, orange & poppy seed muffins

Ingredients

Orange Cake Mix 5 x 500g
  • Orange Cake Mix 5 x 500g
  • Juice from half a lemon and half an orange
  • 130ml - 140ml water
  • 60ml vegetable oil
  • 10g poppy seeds
  • Zest from 3 lemons and 1 orange
  • CRUMBLE
  • 100g flour
  • 50g butter
  • 50g sugar
  • Zest from 1 lemon and 1 orange
  • 5g poppy seeds
  • ASSEMBLY
  • Lemon curd

METHOD

Crumble

  1. Rub the butter into the flour until it resembles light breadcrumbs, avoid overworking.
  2. Stir in the remaining ingredients until just combined.
  3. Bake at 180–190°C for about 20 minutes or until lightly golden.
  4. Set aside to cool.

Cupcakes

  1. Preheat the oven to 160°C and line a cupcake tin with 12 muffin cases.
  2. Mix the Orange Cake Mix with the other ingredients until you have a smooth batter (about 1–2 minutes).
  3. Divide the batter evenly between the cases.
  4. Generously spoon the cooled crumble onto each.
  5. Bake for 18–22 minutes, then transfer to a wire rack to cool.

Assembly

  1. Serve as-is, or use a piping bag to gently pierce each cupcake and fill with lemon curd, pipe a little on top for good measure.
