Mediterranean Capsicum Slice

Ingredients

Cheddar Cheese & Onion Bread Mix 5 x 500g
  • Cheddar Cheese & Onion Bread Mix 5 x 500g
  • Wright's Cheese & Onion Bread Mix 500g
  • Warm Water 300 ml
  • Topping:
  • Mozzarella 125g
  • Red Onion 1 medium
  • Green Pepper ½ medium
  • Red Pepper ½ medium
  • Yellow Pepper ½ medium
  • Olive Oil 2 tablespoons
  • Olive Oil 1 tablespoon for oiling pan
  • Olive Oil 2 tablespoons
  • Pasta Sauce 3 tablespoons
  • Salami 12 slices
  • Grated Cheese 100g

METHOD

METHOD (Makes 1 tray – 12 portions).

  1. Slice the onion and peppers and soften in a pan using 1 tbsp olive oil.
  2. Place the water and bread mix into a bowl and mix well to form a soft dough.
  3. Knead well for 5 minutes until a well developed dough is formed.
  4. Rest for 5 minutes
  5. Press the dough into a greased “Swiss roll” tin measuring 30x20cm.
  6. Cut the mozzarella cheese into strips and slightly moisten the edges of the dough.
  7. Place the strips of mozzarella onto the edge and fold over the dough to seal the cheese in, to give a stuff crust effect.
  8. Spread the sauce over the base of the dough and top with salami slices.
  9. Sprinkle over the sliced onions and peppers.
  10. Cover with a damp tea towel, lightly oiled plastic or polythene and prove in a warm place for 30-40 minutes.
  11. Sprinkle over the grated cheese.
  12. Bake in a preheated oven 220C, 420F gas mark 7 for 20-25 minutes or until golden brown.
  13. Allow to cool in the tin before removing.

Delicious if eaten warm with a light salad for lunch. Cut diagonally and serve pizza style or serve rustic slices. Cut into cubes for cocktail parties with a cocktail stick and an olive or onion on top.
