Orange cake

Ingredients

Orange Cake Mix 5 x 500g
  • Orange Cake Mix 5 x 500g
  • Orange Cake Mix
  • 2-3 oranges
  • 50ml orange juice
  • 150ml water
  • 60ml vegetable oil
  • 80-100g light brown sugar (or caster sugar)
  • BUTTERCREAM
  • 200g butter (room temperature)
  • 400g icing sugar
  • 5g orange zest or orange flavouring

METHOD

  1. Slice the oranges in rounds (you can juice the off-cuts and use them as the orange juice for the cake).
  2. Put the oranges in a pot of boiling water on the stove and boil for 2-3 minutes. Repeat the process with clean water (we do this to reduce the bitterness from the orange skins). Place the oranges on a clean cloth or kitchen roll to pat dry.
  3. In a bowl, mix together the Orange Cake Mix, orange juice, water and oil and mix well.
  4. In three tins, place a greaseproof paper round, sprinkle the light brown sugar and place the orange slices on top. You can either do this for just the top layer, or for all layers.
  5. Place around 250g of the cake mix on top of each and spread evenly.
  6. Bake as per the suggested temperature on the BOP for 18-22 minutes (oven dependant).
  7. For the buttercream, combine the ingredients and mix until the buttercream is lighter in colour and smooth/fluffy.
  8. Once the cakes have cooled, layer the cakes with the buttercream between each layer. Feel free to add Orange jam inbetween too!
