Orange Zest Cake
- PREP: 20 mins
- BAKE: 55 - 60 minutes
- SERVES: 8
METHOD: – (Makes 1 loaf cake)
Mix together all the ingredients listed under “Cake” in a bowl to form a batter.
Pour the mixture into a well-greased or pre-lined (2lb) loaf tin.
Bake in the lower half of a preheated oven at 160-170°C (320-338°F Gas Mark 3-4) for approximately 55-60 minutes.
Remove from tin after 5 minutes and allow to cool on a wire tray.
Mix the icing sugar with a 1-2 tbsps of water or orange juice to form a thick but slightly runny icing.
Scatter the top with zest of orange
