Special Banana Loaf

Ingredients

Scofa Soda Bread Mix 500g
  • Scofa Soda Bread Mix 500g
  • 250g Wright’s Scofa Soda Bread Mix
  • 125g Butter
  • 100g Caster Sugar
  • 1 Size 4 Egg
  • 2 Tablespoons Runny Honey
  • 2 Teaspoons Cinnamon
  • 2 Large ripe Bananas mashed up.
  • 50g Chopped Walnuts
  • 3 Tablespoons Milk
  • Grated Rind of half an Orange
  • 125g Cream Cheese
  • 1 Tablespoon Icing Sugar
  • 25g Candied Banana

METHOD

MAKING BY HAND

Rub butter into the Scofa mix until it resembles breadcrumbs
Mix in the sugar, egg, honey, cinnamon, orange rind, bananas and walnuts then add the milk to make a soft consistency.
Turn the mixture into a well greased and floured loaf tin of 11/2 pt capacity.
Bake in the centre of a pre-heated oven at 170°C (340°F) Gas Mark 4 for 50 minutes – 1 hour, then cover with foil and bake for a further 40 minutes until the loaf is firm to the touch, then turn out onto a wire rack to cool.
Beat sifted icing sugar into the cream cheese and leave to soften.
When the loaf is cold, spread the top with the softened cream cheese mixture and decorate either with banana chips or, if you intend to eat the cake at one sitting, with fresh banana.
