Sticky Toffee Pudding

Ingredients

Toffee Cake Mix 5 x 500g
  • Toffee Cake Mix 5 x 500g
  • Wright’s Toffee Cake Mix (½ pack) 250g
  • Chopped Dates 50g
  • Chopped Walnuts 40g
  • Vegetable Oil (2 tbsp) 30ml
  • Water (¼ pt) 140ml
  • Butter 50g
  • Dark Soft Brown Sugar 100g
  • Double Cream (¼ pt carton) 140ml

METHOD

MAKING BY HAND

METHOD: Makes 4 – 6 portions
Place the half a pack of mix, dates, walnuts, oil and water into a 900ml (1½ pt) microwaveable pudding bowl and stir together well with a fork.
Using the microwave, cook on full power for the time recommended using the table below as a guide*.
Remove pudding from microwave, cover with a plate and leave to rest for 5 minutes whilst making the sauce.
Place the butter, cream and sugar in a microwaveable bowl and heat on defrost setting until the butter has melted. Stir well to completely dissolve the sugar then continue to microwave, allowing the sauce to boil gently for 1 minute.
WARNING: PLEASE TAKE CARE WHEN HANDLING THE SAUCE
Tip the pudding out onto a serving plate and spoon over the Toffee Sauce.

* Microwave Cooking Times:

Power 800-850 Watt. Set on full power for 4 minutes
Power 700-750 Watt. Set on full power for 4½ minutes
Power 600-650 Watt. Set on full power for 5½ minutes

This is delicious and our very first microwaveable recipe which means it can be produced in an instant for last minute guests at home or made anywhere that has a microwave; in your caravan, impress your friend in her flat on a girls night in, a treat if visiting a poorly relative at home. Just don't eat this tasty Toffee creation all at once!
