Lemon & Honey Tea Squares

METHOD

METHOD – (Makes 1 tray – 12 to 14 portions).

Using the ingredients listed above for the “Cake”, mix all of the ingredients together to form a batter by hand and deposit into a well greased or lined baking tray/sheet approx. 25 x 17.5 cm (10 x 7 inches).
If desired, cut a lemon into thin slices and then again into quarters. Place these in a regular fashion on top of the tray/sheet of cake batter, so that once baked and cut into squares, each will have a lemon quarter in the centre or refer to other tips below.
Use 12 – 14 quarters of lemon slices dependant upon size of squares to be cut once baked.
Bake in the oven at 160-165ºC (320-330ºF Gas Mark 3 – 4) for around 20-25 minutes until baked. Allow to cool.
Cut into squares 5 x 5 cm (2 x 2 inches) as illustrated in the picture.
(12-14 pieces dependant upon size cut based on the above recipe).
NOTE: The above recipe can be used to make a cake in a bread machine.
USING A BREADMAKER

Using the ingredients listed above for “cake”, place all wet ingredients first followed by the Madeira mix, in your bread making machine pan and start the cake programme.
If you do not have a cake programme, leaving the paddle in the pan, go to the basic cycle to mix but stop the machine after 15 – 20 minutes. Turn off the machine via the plug or press reset then switch the machine to the bake cycle. Place the lemon slices on the top of the cake batter in a regular fashion and bake for a minimum of 1 hour and 10 minutes – maximum of 1 hour and 30 minutes.
After baking, leave the cake in the machine for a further 10 minutes before tipping out.

Hi Deb Just received your welcome pack via the post – its great and all looks delicious. I discovered your flour mixes 3 months ago and I have made my son's birthday cake from a bottom layer of chocolate fudge cake mix and top layer of your madeira cake mix, covering it in chocolate fudge butter cream icing and Smarties. What a BIG hit that was for all the kiddies. Delicious, no-one could believe it came from a mix.

An optional extra would be to make a lemon drizzle sauce with: 2 tablespoons Icing Sugar Juice of ½ lemon Simply squeeze half a lemon and stir in two tablespoons of icing sugar drizzle this lemon liquid over the cake for a delicious glaze. Further decoration could be with orange and lemon jelly slices or liquorice. Decorate each slice and cling film for lunchboxes or unexpected guests. Deb the Bread
