Ingredients
- Madeira Cake Mix 5 x 500g
- Wright's Madeira Cake Mix 500g
- Water 200ml
- Vegetable Oil 60ml (4 tablespoons)
- Ground Almonds 100g
- Glace Cherries 300g
- TOPPING:
- Flaked Almonds 50g
Method: (Makes 1 cake 8-10 slices)
Wash the syrup off the cherries, dry and quarter. Mix with the ground almonds and set aside.
Place the cake mix, water and vegetable oil into a bowl and beat for 1-2 minutes to form a smooth batter.
Add the ground almond and cherry mixture to the cake batter and mix well.
Place in a well greased and lined 8” cake tin.
Sprinkle over the flaked almonds.
Bake in a preheated oven 180°C (360°F) Gas Mark 4 for 55-60 minutes until firm to the touch.
Allow to cool for 15 minutes before removing from the tin and placing onto a wire rack to cool completely.
Just bought your Chocolate Fudge Cake mix and made it into a birthday cake for a friend, I divided the mixture into two 7 inch loose bottomed tins and cooked on 180 for 30 minutes each, then added cherry jam and butter icing for the filling, it was passed round to 17 people and 3 pieces over. I could'nt believe how big the cake was from such a small packet of mix. Thank you.

Whilst recommend you flour cherries to stop any sinkage, this should not be necessary with this recipe as they will be coated with the ground almonds which should do the job nicely. Deb the Bread
