Place bread mix in a bowl or in a food mixer, add water and oil. Mix together for 5 mins to form a ball of dough.
Place the dough on a floured surface and leave for 5 minutes. Knead and stretch for two minutes (or put back on the mixer). Mould into a ball, rest for 5 minutes.
Cut the dough into 10 equal parts (around 80g) and shape into balls.
Flour the surface and your rolling pin, and roll out the balls into oval or round shapes. Cover with a damp cloth or cling film and set aside to raise for 20 minutes. Preheat your oven to 220°C or above and place your baking tray in the oven.
Carefully remove the hot tray from the oven and (always closing the oven door to keep it as hot as possible), place the pitta breads on the hot tray and put back in the oven. Bake for 3-5 minutes depending on the oven. You will notice the pittas puffing up – creating an air pocket in the middle. Once they have raised place in a dry cloth and continue the process until they are all cooked. Once cooled you can carefully slice open half of the pitta.
