Tutti Frutti Spiced Tea Loaf

METHOD

Add the sugar, oil and cinnamon to the bread mix and mix the dough following the directions on the pack. Add the fruit as above and mix thoroughly through the dough.
Allow the dough to rest as stated on the pack.
Shape dough and place in a greased, warmed 2 Lb loaf tin.
Prove the dough in a warm place, covered with a damp tea towel until doubled in size.
Bake in a pre-heated oven at 230°c (450°f) gas mark 8 for 25 – 35 minutes or until golden brown.
