Apricot & Walnut Slice – Tray Bake

Ingredients

Madeira Cake Mix 5 x 500g
  • Madeira Cake Mix 5 x 500g
  • Chopped Dried Apricots 100g
  • Chopped Walnuts 100g
  • Crushed Ripe Banana 100g
  • Water 200ml
  • Vegetable Oil (4 tablespoons) 60ml
  • Chopped Walnuts 25g
  • Demerara Sugar 25g

ADD TO BASKET

METHOD

METHOD – (makes 12 – 15 portions)

Mix together all the ingredients listed under “Cake” in a bowl to form a batter.

Pour this into a well greased or pre-lined oblong baking tray approx. 27 x 17.5 cm (11 x 7 inches).

Mix together the chopped walnuts and demerara sugar listed under “Decoration” and sprinkle these evenly over the top of the cake.

Bake in a preheated oven at 180°C (356°C) gas mark 4 for 35 – 40 minutes.

Allow to cool.

Remove from tray and cut into even sized pieces.
