Autumn Focaccia

METHOD

  1. In a large bowl, combine the ciabatta mix with olive oil and water to form a soft dough.
  2. Knead for 5 minutes until smooth, then cover with a damp tea towel or lightly oiled polyethene and leave to rest for 15 minutes.
  3. While the dough rests, thinly slice the apple.
  4. Measure the honey into a small bowl and microwave for 30 seconds until runny. Stir in the chilli flakes.
  5. Lightly grease a loaf tin and transfer the rested dough into it. Cover again for 5 minutes.
  6. Using your fingers, press deep dimples into the dough.
  7. Drizzle a little olive oil over the top, then layer on the apple slices.
  8. Sprinkle with sage and bake at 200°C for 30 minutes, or until golden and cooked through.
  9. Remove from the oven and drizzle over the chilli honey. Allow to cool slightly before serving.
