Banana Date and Walnut Cake

Ingredients

Carrot Cake Mix 5 x 500g
  • Carrot Cake Mix 5 x 500g
  • Wright’s Carrot Cake Mix 500g
  • Water 150ml
  • Dates (Chopped) 100g
  • Honey 3 Tablespoon
  • Over Ripe Bananas (mashed) 2
  • Walnuts (Chopped) 50g
  • Walnuts (Roughly Chopped) 50g
  • Butter 50g
  • Clear Honey 4 Tablespoons

METHOD

Method (Makes 1 cake – 12 portions)

Place the cake mix, honey and water into a bowl.

Mix together to form a smooth batter.

Add the mashed bananas, walnuts, dates and mix well

Pour into a well greased or pre-lined (2lb) loaf tin.

Bake in a lower half of a pre-heated oven 170 °C (340°F, Gas Mark 3-4) for approximately 55-60 minutes.

Remove from tin after 5 minutes and cool on a wire tray.

Put the honey and butter into a small saucepan, stirring until the butter has melted and bring to the boil. Boil for about 1 minute until it has thickened slightly.

Stir in the walnuts and allow to cool, until thick and opaque.

Drizzle over the cake as per illustration and allow to set.
