Breakfast Muffins

  • BAKE: 24
  • SERVES: 1

Place the bread mix into a bowl and add the milk. Mix to a smooth batter.

Cover with cling film and leave in the fridge overnight.

Remove the batter from the fridge and allow to come to room temperature for about 2 hours.

Dissolve the bicarbonate of soda with the warm water and fold into the batter mix.

Rest the batter for 5-10 minutes.

Grease and heat a griddle pan over a low heat.

Grease the inside of four crumpet rings and dip into the semolina or polenta and place onto the griddle pan.

Sprinkle some semolina or polenta inside the rings on the griddle pan.

Fill the crumpet ring about 2/3rds full with the batter.

Sprinkle a little more semolina or polenta on top of the muffins.

Allow to cook slowly for about 12 minutes until the bottoms are golden brown and the top has dried.

Turn the muffins over and cook for another 12 minutes until they are springy to the touch.

Allow to cool for a couple of minutes before removing the rings.

“I would like to congratulate you on some excellent pre-mix products, I have in the past years tried a huge arrange of pre-mix breads & cakes as I'm no real baker and need all the help I can have, but so enjoy freshly made products. Products i have tried are from large named products we all know to shop own, but all have left me some what slightly dissapointed. I recently came across your range in Morrison's - a shop I don't normally go into - I came across your range and picked up a selection to try. Well I'm hooked, the family can not get enough of the Toffee Cake Mix and the Chocolate ones and others. So I thought I would email you to say a big thank you for bringing these products into our house, does mean a further travel to Morrison's to pick it up but its very worth it. I work in an industry that supports the public and its always nice when you get a compliment, I'm sure you get plenty but the little time it takes to write an email I thought I would send one. Big Thank you.... Many thanks”
