Ingredients
- Carrot Cake Mix 5 x 500g
- Wright's Carrot Cake Mix
- Crushed Pineapple 60g
- Crushed Walnuts 60g
- Vegetable Oil 60ml
- Water 200ml
- Icing Sugar 250g
- Full Fat Soft Cheese 150g
- Lemon Juice 1 teaspoon
- Water 2 teaspoon
- Crushed Walnuts
MAKING BY HAND
Using the ingredients listed above for the “Cake”, mix all of the ingredients together to form a batter, by hand following the instructions as on the pack to produce a finished baked cake. Allow to cool.
Using the ingredients listed above for the “Filling & Topping”, blend together in a bowl the icing sugar and full fat soft cheese using a spoon. Then add the lemon juice & water and beat together until fully blended.
Cut the baked carrot cake in half through the middle and fill in between the 2 layers with half of the cream cheese topping. Then apply the remainder of the cream cheese on top of the cake.
USING A BREADMAKER
Using the ingredients listed above for the “Cake”, mix all of the ingredients together to form a batter, in the bread machine following the instructions as on the pack to produce a finished baked cake. Allow to cool.
Using the ingredients listed above for the “Filling & Topping”, blend together in a bowl the icing sugar and full fat soft cheese using a spoon. Then add the lemon juice & water and beat together until fully blended.

Why not finish with some sprinkled crushed walnuts or present it just like the Americans do by dragging a fork across the top for a traditional look then decorate with nuts, candied banana or pineapple – don’t forget to lovingly lick the fork after decoration prior to washing up! Deb the Bread
