Fruits of the Forest Squares

Ingredients

Madeira Cake Mix 5 x 500g
  • Madeira Cake Mix 5 x 500g
  • Wright's Madeira Cake Mix 500g
  • Water 200m
  • Vegetable Oil 60ml
  • Fruits of the Forest mixture 250g (frozen or fresh)
  • Fruits of the Forest (reserved for decoration)
  • Crushed Digestive Biscuits 25g
  • Demerara Sugar 25g

METHOD

METHOD (Makes 1 tray 12 – 15 portions)

Mix the Madeira Cake Mix, Water and Vegetable Oil together to form a batter, then gently fold through half of the Fruits of the Forest mixture, reserving the other half for decoration.
Pour this into a well greased or pre-lined baking tray approx 27 x 17.5cm
(11 x 7 inches).
Sprinkle over the remaining Fruits of the Forest reserved for decoration.
Mix the Crushed Digestive Biscuits and Demerara Sugar (decoration) together and sprinkle this evenly over the fruit topping.
Bake in the oven at 180°C (360° F Gas Mark 4) for approximately 30 – 35 minutes.
Allow to cool, before removing from the tray and cutting into squares.

Hi Deb I just wanted to let you know that one of my favourite cakes at this moment in time is using your Madeira cake mix and adding 2 large or 3 smaller ripe bananas and adding a pack of chocolate chips! This cake mix is better having been stored in the freezer and once thawed, it is sooooo moist it is unbelievable!!!

Serve this up all summer long, on its own or with cream and/or ice cream. Serve in large chunks and small squares to please everyone. The recipient of the small square will want a larger helping next time they call! Deb the Bread
