Hugo Spritz Cake

Ingredients

Madeira Cake Mix 5 x 500g
  • Madeira Cake Mix 5 x 500g
  • 1 lime (zest)
  • 2 tbsp elderflower cordial
  • DRIZZLE
  • 200g caster sugar
  • 1 lime (juice)
  • 3 tbsp elderflower cordial
  • 100ml prosecco
  • ICING
  • 250g icing sugar
  • 100ml elderflower cordial
  • 1 lime (juice)

ADD TO BASKET

METHOD

1. Preheat the oven to 170c and line a loaf tin with baking paper.
2. Combine the cake ingredients, add to the loaf tin and bake for 45 mins.
3. Whisk the lime juice, cordial, sugar and prosecco until combined and pour over the baked loaf cake whilst still hot.
4. Leave to cool and top with the elderflower icing.
5. Slice, serve and enjoy!
