Ingredients
- Mixed Grain Bread Mix 5 x 500g
- Wright’s Mixed Grain Bread Mix 500g
- Porridge Oats 100g
- Milk 330ml
- Runny Honey 1 tbsp
- Mixed Fruit (Cranberries, Apricots, Sultanas) 150g
- Milk To brush
- Porridge Oats 2 tbsp (approx)
Method (Makes 1 unit – 8 portions)
Place the bread mix into a bowl with the honey, oats and milk.
Mix to a soft dough.
Knead well for 5 minutes until a well developed dough is formed.
Cover loosely with polythene and allow the dough to rest for 5 minutes.
Meanwhile, coarsely chop the apricots into 4.
Add the fruit and mix well, using flour for dusting if required.
Shape the dough into a round and flatten with the palm of your hand to around 20cm in diameter.
Place on a well greased baking sheet.
Brush with milk and sprinkle on the porridge oats.
Cut the dough in 8 equal pieces keeping the round intact.
Cover with polythene and place in a warm place for about 40-50 minutes or until double in size.
Bake in a preheated oven 200°C (390°F) gas mark 6 for 25-30 minutes until golden brown and well risen.
