Tomato & Herb Bread

METHOD

MAKING BY HAND

If cold, slightly warm the tomatoes and then add to the bread mix with the mixed herbs in place of water.
Follow the instructions on the pack for making the dough.
Divide the made up dough into 3 pieces and mould into balls.
Rest for 5 minutes.
Mould each piece into a 30cm (12″) strand and form a 3-piece plait.
Prove in a warm place for 25-30 minutes or until doubled in size. If desired, sprinkle the top with the grated cheese.
Bake in a preheated oven at 230°C (450°F) gas mark 8 for 25-30 minutes or until golden brown.

When cut, the baked Tomato & Herb bread is pink in appearance, very warming to serve in winter and a delicious mediterranean flavour in summer.
